250g of flour
1 egg
1 spoon of vanilla sugar
100 g of soft butter
100 g of caster sugar
50 g ground almonds
Jam or spread Icing sugar for the finish.
Mix the soft butter with the caster sugar and the vanilla sugar. Work the mixture well until a whitish cream is obtained, then add the egg. Mix everything then add the flour and ground almonds. Work the dough well until you obtain a ball. Put it in a container and leave in the refrigerator for at least 30 minutes. Flour the work surface and roll out the dough there with a rolling pin. It should be neither too thin nor too thick. Cut large enough circles with a cookie cutter. In half of the cookies obtained, make a hole in the center. Put in the oven for 10 to 15 minutes at a thermostat of 5, 150 °, they must have a white color. Let cool then put jam on the full shortbread.
