Ingredients FOR 6 PERSONS

3 eggs 80 g of blond cane sugar
80 g flour
1 small jar of jam (raspberries, strawberries, blueberries …)
140 g of cream cheese (ricotta or mascarpone)
70 g icing sugar

1. In a bowl, whisk
1 whole egg and 2 egg yolks.
Add half the sugar and mix until the mixture turns white. Then gradually incorporate the flour.
2. Whisk the 2 egg whites until stiff with the remaining sugar. Gently fold them into the cake batter.
3. Divide the cake batter into a silicone roll cake pan (23 x 33 cm) or on a baking sheet lined with parchment paper.
4. Bake 8 to 10 minutes in an oven preheated to 180 ° C.
5. Right out of the oven, turn out your biscuit onto a clean tea towel. Remove the silicone mold or baking paper and roll the cookie on itself, with the tea towel. Leave to cool for 10 to 15 minutes.
6. Carefully roll out the cookie and garnish with jam.
7. Cut the openings and place your cookie on a serving platter.
8. To decorate, mix the cream cheese and icing sugar with a fork. Spread this preparation on the cake to transform it into an express and light Yule log!
